Tunisia wins cous cous world championship

Ten countries in San Vito Lo Capo. Visitors award Senegal

    (ANSAmed) - PALERMO, OCTOBER 1 - Tunisia is the winner of the cous cous world championship, a competition between 10 countries organized during the Cous Coust Fest in San Vito Lo Capo that wrapped up Sunday. The recipe presented by Nabil Bakouss, who works at the restaurant Joia of chef Pietro Leemann, with the help of chefs Youssef Abdelli and Lamjed Hosni, was the most appreciated by the technical jury among those of the nine other competing nations: Angola, Ivory Coast, Israel, Italy, Morocco, Senegal, Spain and the United States.

    The jury of experts, chaired by Fiammetta Fadda, a journalist for Panorama, included 14 journalists, chefs and bloggers. The Tunisian recipe 'Mare Nostrum' was a cous cous with red shrimp, grilled harissa and fennel hummus.

    Israel, represented by chef Moshe Basson of restaurant Eucalyptus in Jerusalem, won the prize for best presentation.

    The popular jury of visitors awarded Senegal, with Ndaye Alioune Badara, known as Paco, who lives in Italy and studied under Gualtiero MArchesi at Alma.

    From the United States, chef Marc Murphy, who manages the restaurant chain Benchmarc Restaurants and is part of the Diplomatic Culinary Partnership of the US State Department won the health and wellness prize.

    The Cous Cous Fest attracted in the town near Trapani thousands of visitors over 10 days including 40 cooking shows.

    ''Cous cous - said the mayor of San Vito Lo Capo Giuseppe Peraino - is the pretext to talk about peace and solidarity of the people under the motto 'make cous cous not war'''.
